Papaya Avocado Chicken Salad

Papaya, avocado, and rotisserie or poached chicken over mache or butter lettuce with a lime walnut oil vinaigrette scented with cumin. Inspired by The Silver Palate Girls in their cookbook Silver Palate Good Times Cookbook.
2 cups poached or rotisserie chicken, diced
2 papayas, diced
2 avocados, diced
4 green onions, chopped
1 lime, zest of
⅓ cup fresh lime juice
⅓ cup walnut oil
Salt and pepper, to taste
4 oz mache lettuce, watercress leaves, or butter lettuce
1.2 cup toasted walnuts, optional
In a large salad bowl or platter, layer lettuces, chicken, papaya, green onions, and walnuts, if using. Whisk lime juice and zest with walnut oil, salt and pepper, and drizzle over the salad.
