Chicken Taquitos

Delicious spicy shredded chicken taquitos with cheddar and pepper jack cheeses, fried and served with sour cream and salsa for dipping.

3 cups cooked chicken, shredded

½ cup salsa

1 cup cheddar cheese, shredded 

1 cup pepper jack cheese, shredded 

Salt and pepper, to taste 

½ cup cilantro, chopped 

2 green onions, chopped 

Olive oil, for frying 

Corn tortillas, heated

Cotija cheese, grated

Sour cream

Salsa  

Shred the cooked chicken with 2 forks or in a stand mixer with the paddle attachment. Warm the tortillas in the microwave between paper towels or in a small stack on low heat in a skillet or griddle, this keeps them from cracking. Mix chicken, salsa, cheese, salt, pepper, cilantro, and green onions together in a mixing bowl. Heat ½ inch of oil in a large skillet over medium heat, fill the warmed tortillas with a couple tablespoons of the chicken mixture, and fold to overlap. Lay them seam-side down in the skillet. When the bottom side is golden brown, carefully turn with tongs until all sides are crispy. Remove taquitos to a serving platter. Serve with a sprinkling of cotija cheese, and sour cream and salsa for dipping.
