Crispy Sesame Ginger Beef Bowl

1 lb skirt or flank steak, sliced into thin strips
¼ cup cornstarch
Salt and pepper, to taste
½ cup olive oil
1 onion, diced
1 golden bell pepper, diced
1 cup carrots, diced
2 cups shiitake or other mushrooms, sliced
3 Tbsp fresh ginger, crushed or minced
3 cloves garlic
Chili flakes, a pinch
2 Tbsp soy sauce
2 Tbsp rice vinegar
2 Tbsp sesame oil
1 Tbsp sesame seeds
2 green onions, sliced
2 Tbsp cilantro, chopped

Mix steak strips in a bowl with cornstarch, salt, and pepper. Heat olive oil over medium-high heat and stir fry the beef 2-3 minutes per side, turning strips until crispy. Remove and place on a paper towel covered plate. Using a paper towel, remove excess oil, leaving about 1 tablespoon in the skillet. Saute onion, pepper, carrots, and mushrooms until softened. Whisk ginger, garlic, chili flakes, soy sauce, vinegar, and sesame oil in a small bowl. Pour into skillet and stir for a minute. Take off the heat and correct for seasoning, garnish with sesame seeds, green onions, and cilantro, then serve over rice.
