Smash Burger and Onion Grilled Cheese

Roasted onions, secret sauce, and a crispy burger patty amps these grilled cheese sammies up.

1 lb ground beef hamburger

Salt and pepper, to taste

1 Tbsp dried onion

1 egg

1 Tbsp A1 steak sauce

1 onion, sliced thin with a mandolin or by hand

4 slices sourdough or brioche bread

Butter, for spreading

2 slices cheddar cheese

2 slices pepper jack cheese

Secret Sauce:

2 cups mayonnaise

1\4 cup red wine vinegar

2 Tbsp. each ketchup, dill relish & dill pickle juice

Garlic salt, onion powder, pepper and hot sauce, to taste

Mix sauce ingredients together in a mason jar, refrigerate any unused portion.

In a mixing bowl, combine hamburger, salt, pepper, dried onion, egg, and A1 sauce. Heat griddle or a skillet to medium heat or 350*. Place thinly sliced onions on the grill, turning occasionally. Shape hamburger mixture into patties about the size of the bread and place on the griddle. Cook about 2 minutes per side, smashing with a metal spatula when turning so the patty gets thin and crispy. Butter bread and set buttered-side down on the griddle, add a cheese slice to each slice of bread. Layer a cooked patty, a couple tablespoons of secret sauce, and golden roasted onions on the toasted cheddar bread and top with the remaining pepper jack layer.
