Pasta Pomodoro

Fresh tomatoes braised with garlic, olive oil and a splash of red wine vinegar, finished with a chiffonade of basil. Amazing over angel hair pasta or any pasta really. 8 oz angel hair or favorite pasta, cooked per directions

2 lbs roma or campari tomatoes, diced

2 Tbsp olive oil

Salt and pepper, to taste

1 Tbsp red wine vinegar

7 cloves garlic, chopped 

¼ cup basil, slice in chiffonade ribbons

½ cup parmesan cheese or feta crumbles

Cook chopped tomatoes in the olive oil over medium heat. Stir in salt, pepper, red wine vinegar and garlic. Cook until somewhat reduced and saucy. Add basil and ladle over your hot cooked pasta. Sprinkle generously with cheese and a basil leaf just before serving.
