Peach Champagne Vinaigrette

A fresh peach vinaigrette with champagne vinegar and thyme leaves; so refreshing.

1 peach or nectarine 

1 Tablespoon maple syrup 

1 Tablespoon Dijon or whole grain mustard 

⅓ cup champagne vinegar 

½ cup olive oil 

¼ teaspoon garlic powder 

Salt and pepper, to taste

½ teaspoon of fresh thyme leaves

Puree the peach in a blender with maple syrup, mustard, and champagne vinegar. With the blender running on low, add in the olive oil, and seasonings. Pour into a lidded jar or a small pitcher and stir in the fresh thyme leaves.
