Lemon Dijon Melting Potatoes

3 lbs Yukon gold potatoes
8 Tablespoons butter, melted
2 Tablespoons whole grain Dijon mustard
1 teaspoon salt
1 teaspoon pepper
1 teaspoon onion powder
1 teaspoon garlic powder
½ teaspoon paprika
½ teaspoon oregano
1 cup chicken broth
1 lemon, zested and juiced
3 cloves garlic, minced
2 green onions, chopped
Preheat oven to 475*. Peel potatoes and slice in 1” thick slices. Spread melted butter onto a rimmed baking sheet along with whole grain mustard, salt, onion powder, garlic powder, paprika, and oregano. Lay potatoes onto the baking sheet and place in the oven. Bake for 15 minutes, remove the baking sheet and turn the potatoes over. Bake for an additional 15 minutes. Remove from the oven and pour chicken broth, lemon zest, lemon juice, and garlic over the potatoes. Bake for 15-20 minutes, checking that they are fork tender when done.
