Sautéed Mustard Greens

Mustard greens sautéed with onions, tomatoes, and garlic with a splash of red wine vinegar. Thanks to Mary Ellen for the lovely greens and recipe idea, she is a great baker, cook, quilter, and friend.

4-6 cups mustard greens, chopped

1 onion, diced

1 Tablespoon olive oil

1 tomato, diced

3 cloves garlic, minced

1 Tablespoon red wine vinegar

Salt and pepper, to taste

Rinse and chop the mustard greens, then place them in a pot of water and boil for about 4 minutes. Drain the water off. In a large skillet, stir the onion and olive oil over medium-high heat until the onion is translucent and soft. Add the mustard greens, tomato, and garlic. Sautee for 1 minute, add red wine vinegar, and season to your liking. Serve warm.
