Prep Time: 10 mins | Cook Time: 30 min | Course: Dinner | Serves: 6

Garlic butter baby creamer potatoes cooked in a rice pot. I love cooking in my rice pot especially during the Summer time.

1 lb baby creamer potatoes, halved or quartered if large

Water, to the 1 line

1 teaspoon salt

½ cup butter

3 cloves garlic, chopped

Salt and pepper, to taste

4 oz cream cheese, cubed (optional)

3 green onions, sliced

Add water to the number 1 line, then add baby potatoes that have been cut in half. Add salt and then close the lid and cook on the quick cycle. The last 10 minutes of the cooking cycle, add butter, garlic, additional salt and pepper, and cream cheese, if using. Top with green onions when finished cooking and ready to serve. Make sure to spoon some of the garlic butter sauce over the potatoes when serving.
