Pear Almond Salad with Pear Apple Butter Vinaigrette

3-5 cups of spring greens
2 pears, halved, cored and sliced
2 green onions, sliced
¼ cup almonds, chopped (I used maple almonds from Trader Joes)
¼ cup apricot stilton cheese, crumbled
¼ cup avocado oil
2 slices sourdough, cubed
Salt, a sprinkle
Vinaigrette:
⅔ cup olive oil
⅓ cup pear white balsamic vinegar
1 Tbsp apple butter (pear butter or pumpkin butter)
1 Tbsp dijon mustard
¼ tsp fresh ginger, grated
Salt and pepper, to taste
Layer greens in a salad bowl\platter. Top with green onions, almonds, cheese and pear slices. Heat oil in a medium sized skillet over high heat and when hot add the cubed sourdough. Stir till browned and crunchy. Remove from the skillet to cool in a paper towel lined bowl and sprinkle with salt. When cooled add croutons to the salad.
Shake olive oil, vinegar, apple butter, dijon, ginger and seasoning together in a mason jar. Pour over salad just before serving.
