Pepper Jack Avocado Tacos

Fresh avocado and melty pepper jack make for fast and delicious tacos whenever you're craving kicks in.
2 cups tricolor coleslaw
1 green onion, sliced
¼ cup cilantro, rough chopped
½ cup pico de gallo (I used ready made)
2 Tbsp salsa verde
1 Tbsp olive oil
1 lime, juiced
Salt and pepper, to taste
Avocado cut into slices
Sour cream, to taste
4 corn tortillas
4 slices pepper jack
Spray olive oil
Mix slaw, green onion, cilantro, pico de gallo, salsa verde, olive oil, lime juice, salt and pepper together in a medium mixing or salad bowl. Preheat a skillet with a spray of olive oil and add tortillas, turn after a couple minutes and add cheese to the top side. Let cook for about 1-2 minutes or until the cheese looks a bit melty and the tortilla is crispy. Transfer to a plate and top with the slaw mix, avocado slices and sour cream.
