Pepper Jack Potato Tacos

Got extra mashed potatoes? Pepper jack and potato tacos are the perfect way to use leftover mashed potatoes. Dip tacos in sour cream mixed with hot sauce for a quick and amazing lunch. Our favorite mashed potatoes are linked below.
3 Tbsp olive oil
4 corn tortillas
4 slices pepper jack cheese
½ cup leftover mashed potatoes
¼ cup sour cream
Hot sauce, to taste
Heat olive oil in a large skillet, place tortillas in the skillet, and top with pepper jack cheese and mashed potatoes. Fry for 2-3 minutes until lightly browned on the underside. Fold in half and fry for about 30 seconds more on each side until crispy. Mix the sour cream and hot sauce for dipping.
