Potatoes Colcannon

3 lbs russet potatoes, peeled and sliced
1 ½ tsp salt
¼ cup butter
¼ cup heavy cream
½ cup cream cheese
2 cup or ½ a head green cabbage, sliced thin or shredded
7 green onions, chopped
Cover potatoes with cold water in a stock pot and boil over medium-high heat until tender, about 15-20 minutes. Transfer potatoes with a slotted spoon to a stand mixer. Simmer the cabbage in the hot water for 2 minutes. Beat potatoes, salt, butter, cream and cream cheese until whipped fluffy. Mix in the cabbage and green onions, tasting and adjusting for seasoning. Serve hot with additional butter.
