8 oz linguini pasta, cooked
10 cloves garlic, chopped
½ cup butter
½ cup cherry tomatoes, halved
2 green onions, chopped
¼ cup cilantro, rough chopped
2 Tbsp olive oil
1 lb medium shrimp, peeled and deveined
Red pepper flakes, a pinch
Salt and pepper, to taste
¼ cup parmesan cheese
½ lemon, squeezed on top
Cook pasta according to package directions and keep warm while making shrimp and browned butter. In a small saucepan, warm the butter and half of the chopped garlic over low heat until a nutty brown color and fragrance is achieved, 5-10 minutes. The mixture will get foamy and the milk solids will drop. Remove from the heat and stir in the cherry tomatoes, green onions, and cilantro. In a medium sized skillet cook shrimp in olive oil with red pepper flakes, salt and pepper, and the remaining half of the chopped garlic, until shrimp is pink and cooked through, 2-3 minutes. In a large pasta bowl, toss the hot pasta with the browned butter garlic sauce until well coated. Top with the sizzling shrimp and grate fresh parmesan on top. Squeeze half a lemon over all before serving.
