Roasted Broccolini with Sliced Sweet Onion

Roasted sheet pan broccolini with a layer of sweet onions sliced on top, grated asiago cheese and a squeeze of roasted lemon…so good! Inspired by Erin Clarke at Well Plated https://www.wellplated.com/roasted-broccolini/
2 bunches broccolini
½ a sweet onion, sliced thin
Aleppo or red flake peppers, a pinch, optional
Salt and pepper, to taste
2 Tbsp olive oil
1 lemon
2 Tbsp asiago or parmesan cheese, grated
Preheat oven to 425*. Arrange broccolini on a sheet pan and top with the sliced onion. Season with the aleppo or red pepper flakes, salt and pepper. Drizzle with the olive oil, flake some zest from the lemon on top, then slice in half and lay halves on the sheet pan to roast. Sprinkle with cheese and pop in the oven. Bake for 15-20 minutes. Broccolini will get lightly blackened and crispy around the edges. Squeeze lemon halves over all before serving.
