Prepared Horseradish Root

Got roots, horseradish is easy to prepare in a food processor or even a blender and will keep for several months. Wear glasses and keep at arm’s length, horseradish will make you cry way worse than onions. Transfer to a small mason or other glass jar. Will keep in the fridge for 4-6 months. 4-6 oz horseradish root
3 Tbsp water
3 Tbsp white vinegar
¼ salt
Peel and cut the horseradish root into small coin sized or ½ inch diced pieces, and place in food processor. Grind until fine. Add water, vinegar, and salt through the feed tube and continue to pulse to a fine consistency placing your hand over the top opening. Wear glasses when opening the container and keep at arm’s length, horseradish will make you cry way worse than onions. Transfer to a small mason or other glass jar. Horseradish Cream:
½ cup whipping cream
½ cup mayonnaise
½ cup horseradish
2 Tbsp dijon mustard
Salt and pepper, to taste
Whisk all ingredients in a mason jar; sauce will keep for a couple of weeks in the fridge.
