Quick Sirloin Chili

A quick and delicious black bean chili made with sirloin steak tips. This comes together in about 15 minutes and is great over rice. I’ve made this with refried beans instead of black beans with great results. Inspired by Rick Rodgers in his fun book On Rice.
2 Tbsp olive oil
1-1 ½ lbs sirloin steak tips
1 onion, diced
1 green bell pepper, diced
3 cloves garlic, minced
2 Tbsp chili powder
1 Tbsp cumin
½ Tbsp oregano
1 cup beef broth
1 15-oz can diced tomatoes
1 15-oz can black beans
½ tsp salt
Black pepper, to taste
Shredded cheddar cheese, green onions, cilantro, and sour cream, for garnish
Preheat olive oil in a large skillet over medium heat, add sirloin steak cubes, onion, pepper, garlic, chili powder, cumin, and oregano. Cook until the onion begins to soften, about 5 minutes, stirring occasionally. Add in the beef broth, tomatoes, black beans, salt and pepper. Simmer another 5-10 minutes reducing the heat to medium-low, until the chili liquid has reduced some and the veggies and meat are cooked through. Serve over rice and garnish with your favorite chili toppings.
