Raspberry Dressing

Delicious creamy raspberry salad dressing is great over mixed baby greens, mache, green onions, raspberries, and goat cheese crumbles. Inspired by John Ash & Co. published in The Tastes of California Wine Country Cookbook compiled by Sonnie Imes. 

⅓ cup raspberries 

2 eggs

½ cup white raspberry vinegar 

1 shallot 

Salt and white pepper, to taste 

1 cup light olive oil

Mix raspberries, eggs, raspberry vinegar, shallot, salt, and white pepper together until well pureed. Slowly drizzle in the olive oil until the mixture is emulsified. Pour over mixed baby greens or mache lettuces with your favorite salad toppings.
