Smoked Turkey Corn Chowder

Prep Time: 15 mins | Cook Time: 30 mins | Course: Dinner | Serves: 6

Creamy corn and potato chowder with cubed chunks of turkey breast meat, and optional, but delicious poblano pepper. I found this whole browned turkey breast at Costco. I’ve also used Willie Bird smoked whole turkey meat.

1 onion, diced

1 Tbsp olive oil

1 poblano pepper, diced, optional

1 lb russet potatoes, peeled and diced

1 quart water

3 cloves garlic, minced

Salt and pepper, taste

Onion, salt, to taste

2 cups corn, fresh or frozen

2 cups Browned or smoked turkey breast, cubed

4 oz cream cheese

1 cup shredded cheddar cheese

1 cup heavy cream

2 green onions, chopped

Add oil and onion to a Dutch oven over medium-low heat and stir occasionally until softened. Stir in poblano pepper, if using, and stir one more minute. Add potatoes and water in increasing heat to medium-high and boil until the potatoes are tender stir and garlic salt and pepper, onion, salt, corn, and cubed turkey meat. Cook for about five minutes until heated through, then add cream cheese, cheddar cheese, and heavy cream. Stirring until melted and thickened about three minutes. Garnish with green onions.
