Ravioli Hearts with Mushrooms and Tomato Cream Sauce

Ravioli hearts in a tomato cream sauce with sauteed mushrooms. Trader Joe’s has these gorgeous red and cream-swirled heart-shaped ravioli stuffed with cheese. This is a quick and easy one-pan dish. Perfect for Happy Hearts Day!
2-4 Tbsp olive oil
1 onion, diced
8 oz cremini mushrooms, sliced
1 Tbsp oregano
Salt and pepper, to taste
1 16-oz tomato sauce
1 cup water
1 ½ cups heavy cream
2 8.8-oz pkgs heart-shaped ravioli
2 green onions, sliced
Parmesan cheese, grated
In a large skillet, heat 1 tablespoon of the olive oil and stir onion for 1 minute over medium-low heat. Add mushrooms, oregano, salt, and pepper, along with more olive oil as needed (the mushrooms tend to absorb the oil). Stir occasionally until the onions have softened and are translucent about 8 minutes. Add in the tomato sauce, water, cream, and ravioli increasing the heat to medium. Top with a lid and allow to cook for 3 minutes. Remove the lid and taste for seasoning. Garnish with green onion slices and parmesan cheese for serving.
