Red Potatoes with Pesto Sour Cream Dip

Creamy halved red potatoes dipped in a pesto sour cream, a delicious and simple potato side.

1.5 lbs baby red potatoes, halved

1 tsp salt

Pepper, to taste

1 green onion, sliced

1 cup sour cream

½ cup pesto


Place halved potatoes in a pot of cold water and bring to a boil with the salt. Boil until tender when pierced with a knife or fork, about 8-12 minutes. Mix sour cream and pesto together and spoon into a ramekin. Spoon potatoes with a slotted spoon onto a platter with the dip. Spoon some of the sauce over the potatoes and sprinkle with pepper and green onions before serving.
