Roast Beef Grilled Cheese Sammies

Grilled cheese on sourdough with roast beef, caramelized red onion, sliced tomato, and cheddar; what could be better! This grilled cheese supreme goes great with tomato soup or cannellini tomato soup (shown in the photo). I’ve linked the soup recipes below.

½ red onion, sliced

1 Tbsp olive oil

4 sourdough bread slices

2 Tbsp butter  

2 cheddar cheese slices

4 tomato, slices

4 roast beef slices

2 Tbsp mayonnaise

Mustard, to taste 


Preheat a griddle over medium heat (or a large skillet if you don’t have a griddle). Heat a smallish skillet over medium-low heat with the red onion slices and olive oil. Stir occasionally until fragrant and caramelized, about 7 minutes. Remove the onions from heat and allow to cool while assembling sammies. Have your ingredients out and ready, butter the bread and place buttered side down on a griddle or skillet. Top with cheddar cheese, tomato slices, roast beef slices, and caramelized onions. Spread mayo and mustard on the 2nd slice of bread and place on top of the sandwich. Butter the top side before flipping the sandwich over, checking to see that it is beautifully browned before flipping.
