Roasted Cherry Tomato and Shiitake Mascarpone Pasta

Cherry tomatoes roast with butter, garlic, and shiitake mushrooms are infused with white wine, and mascarpone cream sauce. Serve over hot fettuccine or other favorite noodles. 

1 lb fettuccine or other favorite pasta, cooked 

¼ cup butter 

4 Tbsp olive oil

8 oz shiitake mushrooms, sliced

2 cups cherry tomatoes, halved 

7 cloves garlic, minced 

Salt and pepper, to taste

½ cup dry white wine 

½ cup heavy cream 

8 oz mascarpone cheese

½ cup Parmesan cheese + more for serving

3 green onions, chopped 

1 Tbsp capers

Basil for garnish

In a large saute pan, stir butter, olive oil, mushrooms, tomatoes, and garlic over medium-low heat until the tomatoes are wilted and the mushrooms are tender, about 8 minutes. Stir in salt, pepper, and wine and cook for an additional 2 minutes until the liquid is mostly absorbed. Add heavy cream, mascarpone cheese, parmesan cheese, green onions, and capers. Cook until warmed through then stir in the hot cooked pasta. Serve with additional parmesan and basil.
