Baked Garlic Butter Chicken Thighs

Garlic butter bone-in chicken thighs baked and served over rice with a spoon of leftover garlic butter sauce.

Pot of rice, cooked

1 Tbsp olive oil

4 chicken thighs, bone in and skin on

Salt and pepper, to taste

¼ cup butter

7 cloves garlic, minced

1 green onion

Preheat oven to 400*. In a large skillet, preheat the olive oil. Pat chicken between paper towels and season with salt and pepper. Cook skin side down for 5 minutes, turn over and cook for 5 minutes on the other side, then remove from the heat. Using a paper towel or spoon to remove all but 1 tablespoon of oil or fat. Add the butter and garlic to the pan and place in the oven cooking until the chicken is 165*, about 10 minutes.  Spoon chicken and garlic butter sauce over rice with green onions, and serve.
