Buttermilk Mashed Bliss Potatoes with Cherry Tomatoes

Baby red potatoes mashed with buttermilk and topped with buttered cherry tomatoes. Great with seared salmon!

3 lbs red baby potatoes, halved 

2 tsp salt, divided 

½ cup butter + 2 Tbsp for tomatoes

1 cup buttermilk

1 pint cherry tomatoes, quartered

1 green onion, chopped (or chives)

Cover potatoes with cold water in a stock pot, adding ½ teaspoon salt. Cook over medium-high heat until done and pierces easily with a fork, about 10 minutes. Drain potatoes and mash in a stand mixer with 1 ½ tsp salt and ½ cup butter. Drizzle in the buttermilk while mixing on low. Whip until fluffy. Transfer the potatoes into a serving dish and top with the tomatoes, green onions, and 2 tablespoons of butter cut into bits.
