Salmon with Garlic Cream Sauce Pasta

4 salmon fillets, dried between paper towels.
Salt and pepper, to taste
1 Tablespoon olive oil
2 Tablespoons butter
3 cloves garlic, minced
½ cup white wine
½ cup chicken stock
1 cup heavy cream
½ cup parmesan cheese + more for serving
2 green onions, chopped
16 oz gigli pasta or other favorite shape, cook per package directions and keep warm
Dry the salmon fillets with paper towels and salt and pepper them. Preheat olive oil in a large skillet over medium-high heat and cook about 4 minutes per side. Turn the heat down if they are cooking too quickly after flipping. Add the butter and garlic and spoon over the salmon. Transfer the salmon to a plate and keep warm. Add white wine to the skillet and stir to deglaze the pan scraping up any yummy bits from the bottom. When the wine has reduced by about half, stir in the chicken stock and heavy cream and cook for 1-2 minutes. Stir in the cheese, then nestle the salmon back into the skillet (checking that it is done to your liking) and turn off the heat. Serve salmon and sauce over the cooked pasta with a garnish of green onions and extra parmesan cheese.
