Salmon with Wilted Power Greens

Salmon has such a luxuriously rich yet delicate mouth feel and picks up flavors beautifully.  This garlic and lemon pan fried version lays on wilted greens with a squeeze of lemon over top.

2-4 Salmon fillets

1 Tbsp. olive oil

1 Tbsp. butter

3 cloves garlic, minced

Salt and pepper, to taste

5 oz. bag of power greens

Everything but the bagel seasoning, to taste (I get mine from Trader Joes)

Half a lemon

1 green onion, sliced fine

Heat the olive oil and butter in a heavy skillet and add fillets, salt & pepper and garlic.  Cook about 2 minutes a side and add the greens on top, cover for 2 minutes. Place wilted greens and fish on a serving platter and season with the everything seasoning, fresh squeeze of a lemon and green onion garnish.
