Shiitake Blue Cheese Butter

Shiitake mushrooms coarsely chopped with blue cheese and butter is delicious with mashed potatoes as well as that perfectly grilled steak. Studded with flavors of black garlic and onion.

1 Tbsp olive oil

½ cup onion, diced

1 clove garlic, minced

1 cup shiitake mushrooms, coarsely chopped

½ tsp glack garlic seasoning

2 Tbsp blue cheese crumbles or gorgonzola

½ cup butter

Salt and pepper, to taste

1 green onion, sliced for garnish

Saute onion in a skillet with the olive oil until soft and translucent, over medium heat. Stir in the garlic and shiitake mushrooms and cook until mushrooms are cooked through and soft. Turn off the heat and stir in the black garlic seasoning, blue cheese and butter. Add salt and pepper to taste. Ladle over steak and mashed potatoes as desired, top with green onions.
