Shrimp Scampi

Garlic, white wine, lemon, dill, and butter flavor this lovely sauce; great over cooked pasta or rice.


2 Tbsp olive oil

2 Tbsp butter 

1 ½ lbs large cleaned shrimp/prawns, tail on or off

¼ cup dry white wine

7 cloves garlic, minced 

1 lemon, zested and juiced

Salt and pepper, to taste 

Red pepper flakes, to taste

¼ cup parsley, chopped 

¼ cup fresh dill, chopped 

Saute shrimp in olive oil and butter, adding white wine, garlic, lemon zest, lemon juice, pepper flakes, salt, and pepper. Cook until pink and heated through, being careful not to overcook as it can turn rubbery. Garnish with parsley and dill just before serving over cooked pasta or rice.
