Skillet Seared Filet Mignon with Blue Cheese Butter

Mouthwatering juicy filet mignon steaks seared in a cast-iron skillet topped with blue cheese butter and green onions. We love steaks cut thick and often buy and cut the tenderloin from Costco. 1 Tablespoon grapeseed or avocado oil
4 filet mignon steaks, cut 1 ½ -2” thick
Hawaiian salt and freshly ground pepper, to taste
Blue Cheese Butter:
½ cup butter
4 oz blue cheese
2 green onions, chopped
Make blue cheese butter ahead of time. Melt the butter in a Pyrex or other microwave-safe bowl for 30 seconds. Stir in the blue cheese and green onions. Allow to sit at room temperature stirring occasionally if it separates.
Season the filets with salt and pepper, pressing the granules into the steak a bit, then set to one side to absorb the flavors and so that the steaks come to room temperature. Preheat the high temperature friendly oil in a cast iron or other heavy bottom skillet over high heat. The skillet will be ready when the oil is just showing a whiff of smoke. Place the steaks in the skillet and sear each side for 3 minutes, cook on each side for another 30-60 seconds or until done to your liking. Begin checking the temperature with an insta-thermometer. Pull at 115* for rare - 120* for medium-rare - and let rest for 5 minutes, tented with foil. Swerve with a generous dollop of blue cheese butter (and be mesmerized as it magically melts into the steak).
