Sweet Chili Steak

Sweet chili marinade with New York or ribeye steaks is so flavorful and good. Boil the marinade for about 1 minute while the steak is cooking for a flavorful sauce. This marinade would be great for flank steak or tritip too.
4 New York or ribeye steaks
½ cup sweet chili sauce
2 Tablespoons soy sauce
7 cloves garlic, minced
1 1” knob of ginger, minced
1 lime, zested and juiced
1 teaspoon salt and pepper
1 Tablespoon olive oil
1 teaspoon sesame oil
Sesame seeds, garnish
Green onions, sliced for garnish
In a mixing bowl, whisk the sweet chili sauce, soy sauce, garlic, ginger, lime zest, and lime juice, salt, and pepper. Place steaks in a baking dish or ziplock bag with the marinade and place in the fridge for up to 2 hours or overnight. Preheat a large skillet over medium-high heat and add olive and sesame oils (omit the oils if grilling the steaks instead of pan frying). Pat the steak free of moisture and place in the skillet. Cook for about 3-4 minutes aside before checking for doneness. Pull at 115* for rare - 120* for medium-rare - and let rest for 5 minutes, tented with foil on a cutting board before slicing.
Pour the marinade into a saucepan and bring to a boil over medium heat for about 1 minute. Turn off the heat and pour over your steak after slicing. Garnish with sesame seeds and green onions.
