Thai Chicken Peanut Noodles

Thai peanut chicken and Yaki-soba noodles with shredded cabbage, cilantro, chopped peanuts, and a delectable peanut sauce. Soon to be a new favorite dish in our household. Inspired by Chungah of Damn Delicious https://damndelicious.net/2017/03/06/thai-peanut-chicken-noodles/
Peanut Sauce:
¼ cup peanut butter
¼ cup soy sauce
3 cloves garlic, minced
2 Tbsp honey
1 Tbsp ginger, grated
1 Tbsp rice vinegar
1 Tbsp sesame oil
1 tsp sriracha or other hot sauce
Whisk the peanut sauce ingredients together in a bowl and set aside.
Thai Chicken Noodles:
2 5.6 oz pkgs yaki-soba noodles from the refrigerator section (discard sauce)
4 chicken thighs
2 cups shredded red cabbage
1 carrot, shredded
3 green onions, chopped
¼ cup cilantro, chopped
3 Tbsp peanuts, chopped
Place noodles in a bowl of hot water to soften and separate them. Heat olive oil in a large skillet, then add chicken and cook about three minutes per side. Stir in cabbage, carrots, and green onions until heated through, about 2 minutes. Drain the Yaki-Soba noodles and stir in with the peanut sauce. Cook for 2 minutes. Garnish with green onions, cilantro, and peanuts, and serve.
