Halibut and Orzo with a Tomato Wine Butter Sauce

Halibut fillets seasoned with everyday seasoning ( from Trader Joe’s) and orzo pasta with a cherry tomato white wine butter sauce. Halibut cooks quickly so have your ingredients out and ready to go. 16 oz orzo pasta, cooked per directions

4 6-oz halibut fillets

Garlic salt, pepper, and everyday seasoning, to taste

1 Tablespoon olive oil 

2 cups cherry tomatoes, halved

3 cloves garlic, minced

⅓ cup dry white wine 

1 lemon, zested and juiced 

 ½ cup butter, divided 

Fresh thyme or other fresh herbs, for garnish 

Cook orzo pasta per package directions, drain and stir in ¼ cup butter, salt and pepper to taste. Place a lid over to keep it warm. 

Dry halibut between paper towels on a plate and season fish on both sides. Preheat a large skillet over medium high heat with olive oil. Add fish and cook for 3 minutes. Flip fish over and cook 2 minutes longer, checking with a fork that it’s done through the thickest part. Remove the fish to a plate and keep warm. Add tomatoes and garlic to the skillet and turn the heat to medium-low. Stir for 30-60 seconds, then add the wine. Stir scraping up any flavorful bits from the skillet. Add the lemon zest and squeeze the lemon juice into the pan. Cook for 1-2 minutes until you have a nice saucy consistency. Turn off the heat and add ¼ cup butter one tablespoon at a time. Serve halibut over the orzo with a generous spoonful of sauce. Garnish with fresh thyme or other fresh herbs.
