Tri Tip Shiitake with Everything Marinade

Juicy tri tip roasted beef with shiitake mushrooms sautéed in the best marinade I've ever had. Marinade has raspberry vinegar, sherry, soy sauce, garlic and lots of ginger to flavor your favorite cut of meat.


1 tri tip beef roast

6 oz shiitake mushrooms, sliced

1 cup everything marinade

Salt and pepper, to taste

Fresh herbs or green onions, garnish

Marinate your tri tip roast for a couple of hours (or overnight) in the fridge. When ready to grill, pour marinade into a skillet and saute with the shiitake mushrooms. Make sure the mushrooms and sauce reach a boiling point since it's been in contact with the meat. Taste for seasoning and add salt and pepper if needed. Grill or roast the tri tip to perfection, let rest for 5 minutes before slicing. Pour mushrooms and any sauce from the mushrooms over the beef and top with fresh herbs or green onions.


Everything Marinade:

½ cup dry sherry

½ cup soy sauce

½ cup raspberry vinegar

½ cup olive oil

4 cloves garlic, minced

1 tsp ginger, grated

1 tsp salt

1 tsp pepper


Mix all ingredients into a mason jar and shake well. Pour up to half of the marinade over your favorite cut of meat in a ziplock bag and store in the fridge for 2 hours or overnight.
