Waffle Baked Potato

Waffle your leftover baked potato and load it up with toppings—a delicious way with leftover baked potatoes. 


Russet leftover baked potatoes, halved

Olive oil 

Butter

Salt

Cheddar cheese 

Sour cream

Green onion, chopped 

Pepper 

Preheat the waffle iron and brush with a bit of olive oil. Cut a baked potato in half and place in the waffle iron. Remove from the iron when cooked and warmed through. Top with butter, salt, cheese, sour cream, green onion, pepper, and cooked bacon bits if you like.
