Yellow Cherry Tomato Pasta

Fresh sweet yellow tomatoes saute in butter with pine nuts, garlic, a balsamic drizzle, and finished with a bit of cream and parmesan cheese. Perfect over fresh pasta or your favorite noodle.

½ cup butter 

2 pints yellow cherry tomatoes 

½ cup pine nuts 

3 cloves garlic, minced 

Balsamic drizzle 

Salt and pepper, to taste

½ cup heavy cream

½ cup parmesan cheese, grated

3 green onions, sliced

1 lb linguine or other favorite pasta, cooked and drained

Stir butter, tomatoes, and pinenuts over medium-low heat for about 5 minutes, the cherry tomatoes should begin to burst and the pinenuts will become fragrant. Add the garlic, balsamic vinegar, salt, pepper, cream, and parmesan cheese. Stir for 3-5 minutes until slightly thickened. Toss with pasta and garnish with green onions and additional parmesan cheese.
