Blackberry Baked Brie
Prep Time: 15 mins | Cook Time: 12 mins | Course: Small Bites | Serves: 8
Oozy brie cheese with blackberries and blackberry jam in the middle. There is nothing like melted brie and tart berries. Serve with a sourdough or French baguette, crostini, or crackers at your next social gathering.
1 wheel brie, sliced in half
1 pint blackberries
½ cup blackberry preserves (I prefer low-sugar jam)
Sliced sourdough baguette, or crostini, for serving with
Preheat oven to 400*. Slice wheel of brie in half lengthwise and spread the bottom half with preserves or jam. Sprinkle with blackberries and replace the top half of the cheese. Place in a cast iron or other heavy bottomed skillet that holds it comfortably. Make slits in the top of the cheese one way and then lengthwise the other way so you have a cross-hatch pattern. Bake for 12-16 minutes or until brie is oozing out the sides and top through your slits. Serve with sliced bread, crostini or crackers.
