“Blooming” Grilled Onions

These delicious onions are great with Thousand Island dressing; they are grilled so a healthier version of the steakhouse favorite. This recipe is courtesy of Diethood but with a couple of minor alterations. 


2 medium onions, sliced ¾ of the way down into 6 wedges (keep bottom intact)

1 Tbsp olive oil

Garlic salt and pepper, to taste

4 Tbsp sharp cheddar, shredded

Thousand Island dressing, for dipping


Place onions on a square of tin foil and drizzle the olive oil over the onion wedges; peel back the wedges a bit to reveal the center of the onion.  Season and stuff the center with cheese. Wrap the foil around the onion and grill at about 500* for about 30 - 40 minutes with your favorite BBQ entree. Serve with the thousand island or your favorite remoulade sauce.

1000 Island dressing

2 cups mayonnaise

1\4 cup red wine vinegar

2 Tbsp. each ketchup, dill relish & dill pickle juice

1 Tbsp whole grain dijon mustard

Garlic salt, onion powder, pepper and hot sauce, to taste
