Brie Stuffed Mushrooms

Baked button mushrooms filled with melty brie and topped with green onions and parsley. This is one of my favorite appetizers. Inspired by Ree Drummond The Pioneer Woman https://www.thepioneerwoman.com/food-cooking/recipes/a8898/mushrooms-stuffed-with-brie/ 

2 Tbsp butter

8 oz button mushrooms, cleaned and stems removed

2 green onions, sliced

ΒΌ cup parsley

A splash of white wine, optional

1 wedge of brie cheese

Preheat oven to 350*. In a medium skillet, cook butter and mushroom caps with a sprinkle of salt for 1 minute. Place mushrooms cup side up in a 8” square baking dish. Add green onions, parsley and a splash of wine (if using) into the skillet and stir for 1 minute. Slice the brie into chunks that will fit the mushroom cavity and stuff. Spoon parsley\green onions over the mushrooms. Bake for 15 minutes and serve warm.
