Mini Green Chile Cornbread Bites with Spicy Jam n Cream Cheese

Mini cornbread bites with green chiles served with a spicy jam, spooned over cream cheese. This is my favorite cornbread, It is light and airy and is inspired by The Silver Palate Girls. I added a sugar crust and green chiles; baking in a mini muffin tin makes a lovely app for celebrating Juneteenth and freedom, Summer or any occasion. I like to serve these with cream cheese and a spicy jam. I found a raspberry jalapeno jam but hot pepper jelly or onion jam is nice too.

1 cup cornmeal

1 cup flour

¼ cup sugar

2 tsp baking powder

¼ tsp salt

1 cup buttermilk

6 Tbsp butter, melted

1 egg

4 oz green chiles

2 Tbsp sugar (for topping)

4 oz cream cheese, softened

4 oz spicy jam, warmed

Preheat oven to 350*. Whisk together in a large mixing bowl the cornmeal, flour, ¼ cup sugar, baking powder and salt. In a small bowl mix the buttermilk, melted butter, egg and green chiles together. Fold into the dry ingredients until just combined. Spray a 1mini muffin tin with cooking spray and spoon batter into the muffin pan. Top with a sprinkling of sugar and bake for about 20-22 minutes. Allow to cool a bit. Serve with cream cheese, spooning jam over the top of the brick (or mixed together).
