Cucumber Sandwiches

Delicious cucumber sandwiches with a mix of cream cheese and butter on white bread cut out to be just bigger than the cucumber. 

1 loaf sliced white bread, I used a sliced brioche

2 cucumbers, peeled in stripes and sliced into rounds

4 oz cream cheese, softened

¼ cup butter, softened

Salt and pepper

Dill sprigs, for garnish

On a flat surface, roll bread a little thinner with a rolling pin and then cut into rounds with a biscuit cutter that’s just a bit larger than your cucumber (I got 2 rounds per slice). I like to peel cucumbers leaving stripes with peel in between for contrast. Slice the cucumbers into ½ “ slices or thicker if desired. Mix the cream cheese and butter into a soft spread and smear a generous amount on each bread round. Season as desired with salt and pepper, top with a cucumber slice and a sprinkling of salt. Garnish with a pretty sprig of dill.
