Spinach Pinwheels

Spinach pinwheels with artichoke hearts, green onions, and cheese are the perfect appetizer for your next event. They are a great make-ahead starter; the next day, slice them into thick rounds and place them on a platter just before serving. 

6 spinach wraps 

8 oz cream cheese, softened 

2 green onions 

½ tsp onion salt 

8 oz cheddar blend cheese, shredded 

5 oz spinach 

1 12-oz marinated artichoke hearts, quartered


Place a wrap on top of a layer of plastic wrap. Mix the cream cheese, green onions, and onion salt together in a mixing bowl. Spread a generous amount of the cream cheese mixture over the wrap and place a mound of spinach in a straight line that runs through the middle, top the mound with a few artichoke hearts. Sprinkle the shredded cheese randomly all over. Fold the wrap over the mound and roll as tightly as you can, then wrap it in the plastic wrap. Place in the fridge overnight, or several hours before serving. When ready to serve, slice into pinwheels and place on a platter.

Tips: Wrap the rolls tightly and let them chill overnight to help them keep their shape when sliced. Also, don’t overdo the toppings, make sure there is some cream cheese showing to help them stick together.
