Halloumi Fries and Avocado Dip

These fried cheese sticks are fabulous dipped in a flavorful avocado smash. I added a bit of mayonnaise to the mash to keep the avocado from browning. Always inspired by the lovely Diane Morrisey who I follow closely on Instagram.
6 oz halloumi cheese, cut into fries or sticks, dry well on paper towels
⅓ cup avocado oil, for frying (or more)
1 avocado
¼ cup sour cream
¼ cup mayonnaise
1 garlic clove, minced
1 tsp hot sauce
1 tsp lemon juice
1 Tbsp cilantro
Salt and pepper, to taste
Add enough avocado oil to a frying pan to come up to the halfway mark of the cheese fries. When hot, add the cheese and fry till golden, turning once. Remove to a parchment-lined plate. Smash the avocado, sour cream, mayonnaise, garlic, hot sauce, and lemon juice together in a small dish. Stir in the cilantro and seasoning, stirring to incorporate. Serve with the warm fries. These are best the day they are made.
