Pomegranate Sparkling Rosé Jelly

Pink and sparkling wine jelly with pomegranate seeds is as delectable as it is beautiful. Although this is decadent it's also super easy and is quick to make. Enjoy with crackers and cheese at your next gathering. 1 750 rosé champagne or sparkling wine

1 cup sugar

¼ cup warm water

1 pack gelatin

½ cup pomegranate seeds


Stir champagne/sparkling wine and sugar together over low heat until sugar melts, about 2-5 minutes. Pour gelatin over water in a microwave safe dish and let bloom one minute. Heat in the microwave for 30 seconds and pour into the champagne sugar mixture. Stir and pour into clean jelly jars with lids and sprinkle in a few pomegranate seeds. Chill in the refrigerator and set a timer for about 10 minutes, sprinkle in a few more seeds when set enough that they don’t all float to the top. Store in the refrigerator with lids on until ready to serve. Looks pretty on a charcuterie board in a small liqueur glass. Delicious spread over crackers or a baguette slice with brie and other cheeses.
