Cottage Cheese Green Onion Hoagie Rolls

This cottage cheese hoagie is so flavorful with black pepper and green onions. I’ve got a dried onion option in case you're out of fresh green onions. A bit of everything but the bagel seasoning on top and your ready for one amazing sub or philly sammy. Recipe inspired by Taste of Home.


½ cup warm water

¼ cup sugar

1 Tbsp yeast

2 cups cottage cheese

2 eggs

2 tsp salt

4 ½ cups flour

2 green onions sliced ( or 1 Tbsp each, dried chives and dried onion)

1 tsp black pepper

Olive oil spray

Everything but the bagel seasoning, a sprinkle

In a stand mixing bowl, pour the water, sugar and yeast. Stir and let proof for 5 minutes. Add in the cottage cheese, eggs, salt, flour, green onions and pepper. Mix on medium speed for 2 minutes. Scrape down the bowl and cover with plastic wrap. Let the dough rise in a warm, draft-free place for about an hour or until the dough has risen to at least twice its size. 


Sprinkle a rolling surface with a light dusting of flour, cut dough in half and roll each half into a roll shape. With a bench scraper or pizza roller cut into about 6 or 7 1 1/2 inch slices. Place on a spray oiled baking sheet (or use a silpat) and press rolls into hoagie shapes. Spray rolls with olive oil spray and sprinkle some everything but the bagel seasoning on them. Let rise in a warm draft-free place for about 30 minutes. Preheat oven to 350*. Bake hoagie rolls for 15 minutes until beautifully golden.
