Brown Sugar Banana Bread Pancakes

Delicious banana pancakes with brown sugar; reminiscent of banana bread with the warm spice of cinnamon. Made in one mixing bowl for easy clean-up. Serve with your favorite toppings; my grandpa used peanut butter, flavored yogurt, fruit and wheat germ on pancakes. 1 cup flour

2 Tbsp brown sugar

2 tsp baking powder

¼ tsp salt

1 tsp cinnamon 

2 bananas, mashed

1 cup milk

1 egg

2 Tbsp olive oil

1 tsp vanilla

Preheat a skillet or the griddle to 350*. In a mixing bowl whisk flour, brown sugar, baking powder, salt and cinnamon together. Add bananas, milk, egg, olive oil and vanilla. Stir to combine and fry on the preheated griddle in heaping tablespoonfuls using olive oil or butter as desired. When bubbles appear, flip the hotcakes over and cook on the other side for about a minute. Dip the edge of the spatula in the thickest part of the pancake and make sure there is no dough and that it looks cooked through.
