Peach Passion Paloma

Passion fruit puree with tequila and peach secco is a tart and refreshing bubbly cocktail. A delightful mocktail would omit the tequila and passion fruit liqueur and substitute the peach secco with passion fruit or peach seltzer water. 3 oz passion fruit puree, purchased or homemade straining out the seeds

2 oz passion fruit liqueur, optional for mocktail

2 oz tequila anejo, optional for mocktail

2 limes, juiced

2 oz simple syrup

1 cup ice

6 oz peach secco or prosecco, passion fruit seltzer for a mocktail

In a cocktail shaker, add passion fruit puree, passion fruit liqueur, tequila, lime juice, simple syrup, and ice. Shake until the ice breaks up a bit, and strain between 3 martini glasses. Pour 2 oz bubbling peach secco or prosecco over each glass. 

Simple Syrup

2 cups hot water

2 cups sugar

Heat water in the microwave or on the stovetop until hot but not yet boiling. Mix until the sugar dissolves and store in a mason jar in the fridge.
