Plum Martini

Pretty plum vodka martini with plum simple syrup, ginger liqueur, and a plum rose ice cube.
Plum simple syrup:
3 plums, diced and pitted
¾ cup sugar
¾ cup water
Plum Martini:
3 oz plum simple syrup
3 oz vodka
3 oz lemon juice
1 oz ginger (or plum) liqueur
Ice
Plum wedge or plum rose ice cube
Sugar (or lemon sugar: linked below)
Plum Rose Ice Cube:
1 plum, sliced thin
water
In a small saucepan over medium-high heat, melt the sugar, water, and plums together. Turn heat to low and allow to simmer for up to 10 minutes to achieve a more colorful syrup. Strain the syrup (or place in a blender and puree) into a mason jar or other lidded jar and store it in the fridge.
Pour simple syrup, vodka, lemon juice, and ginger liqueur into a shaker and fill with ice. Using a lemon wedge, rim cocktail glasses and dip in sugar or lemon sugar. Set to one side. Shake the cocktail shaker then pour through the strainer into the glasses. Garnish with a lemon wheel and plum slice or make a plum rose ice cube and freeze ahead of time.
Pit and slice the plum, the thinner, the better for easy rolling. Place 3 plums in a line overlapping them. Roll up from one end to the other end and place in an ice cube mold. Fill in the middle with 1-2 more rolled plum slices as needed for your ice cube size and design. Top with water and freeze until firm.
