Bourbon Peach Cake with Butterscotch Bourbon Frosting

1 cup butter, softened
2 cups sugar
2 eggs
1 Tbsp vanilla
1 Tbsp bourbon
1 Tbsp lemon juice
2 ¼ cups flour
½ tsp baking soda
¼ tsp salt
1 cup buttermilk
2 cups fresh peaches, diced
Preheat oven to 350*. In a stand mixer, beat the butter and sugar until fluffy. Mix in the eggs, vanilla, bourbon and lemon juice. Sift the flour, baking soda and salt on top and mix until just combined. Add the buttermilk and peaches mixing in by hand with a rubber scraper. Spray oil in a 9x13 pan and pour the prepared batter in. Bake for 40-45 minutes or until golden and a toothpick inserted in the middle of the cake comes out clean of crumbs. Make glaze while the cake is baking.
Brownscotch Bourbon Frosting:
½ cup butter
½ cup heavy cream
1 cup brown sugar
1 tsp vanilla
1 Tbsp bourbon
2 cups powdered sugar
Gently bring the butter, heavy cream and brown sugar to a boil in a medium size saucepan. Turn off heat and whisk in the vanilla, bourbon and powdered sugar. Pour hot glaze over the baked peach cake.
