Lemon Gel

Lemony refreshing gel will cleanse your palate while satisfying your sweet tooth. You could sweeten a bit of whipped cream to go on top or leave it light, lemony and luscious. Inspired by Lori Longbotham in her cookbook Luscious Lemon Desserts.
3 ¼ cups water
1 cup sugar
¼ cup lemon zest
1 ¼ cups lemon juice
3 pkgs plain gelatin, like knox
2 Tbsp limoncello
Measure water in a heatproof liquid measuring glass, add sugar, lemon zest and juice and gelatin. Stir and let the gelatin bloom for 5 minutes. Microwave for 2 minutes, stir and give it 2 more minutes. Stir in the limoncello and strain the lemon zest out through a sieve if you want a smooth texture (I left it in). Lightly spray oil 6 1-cup ramekins to divide gel into. Refrigerate at least 2-3 hours to set before serving.
